Ingredients
- 8 slices bacon
- 1 head of lettuce, shredded
- 2 tomatoes, diced
- 8 spring roll wrappers
- 1 egg, beaten
- Vegetable oil, for frying
- Salt and pepper, to taste
Directions
- In a large skillet, cook the bacon until crisp. Transfer to a paper towel-lined plate and set aside.
- In a medium bowl, combine the lettuce, tomatoes, and bacon. Season with salt and pepper to taste.
- Lay out one spring roll wrapper. Place about 2 tablespoons of the bacon mixture in the center of the wrapper. Brush the edges of the wrapper with the beaten egg.
- Fold the left and right sides of the wrapper over the filling, and then roll up from the bottom. Repeat with remaining wrappers.
- In a large skillet, heat the vegetable oil over medium-high heat. Fry the spring rolls until golden brown, about 2-3 minutes per side.
- Transfer to a paper towel-lined plate to drain the excess oil. Serve immediately.
