Ingredients

  • 8 slices bacon
  • 1 head of lettuce, shredded
  • 2 tomatoes, diced
  • 8 spring roll wrappers
  • 1 egg, beaten
  • Vegetable oil, for frying
  • Salt and pepper, to taste

Directions

  1. In a large skillet, cook the bacon until crisp. Transfer to a paper towel-lined plate and set aside.
  2. In a medium bowl, combine the lettuce, tomatoes, and bacon. Season with salt and pepper to taste.
  3. Lay out one spring roll wrapper. Place about 2 tablespoons of the bacon mixture in the center of the wrapper. Brush the edges of the wrapper with the beaten egg.
  4. Fold the left and right sides of the wrapper over the filling, and then roll up from the bottom. Repeat with remaining wrappers.
  5. In a large skillet, heat the vegetable oil over medium-high heat. Fry the spring rolls until golden brown, about 2-3 minutes per side.
  6. Transfer to a paper towel-lined plate to drain the excess oil. Serve immediately.
