Ingredients

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup coconut oil, melted
  • ¾ cup cane sugar
  • 2 tablespoons lemon zest
  • 1 teaspoon vanilla extract
  • ¾ cup almond milk
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons poppy seeds

Directions

  1. Preheat oven to 350°F.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda and salt.
  3. In a large bowl, mix together the coconut oil, sugar, lemon zest, and vanilla extract until creamy.
  4. Add the almond milk and lemon juice to the coconut oil mixture and whisk until combined.
  5. Slowly add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fold in the poppy seeds.
  7. Divide the batter among 12 muffin tins lined with paper or silicone liners.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Remove from the oven and let cool before serving.
