Fresh Blackberries and Cream Ice Pops

Ingredients

  • 1 cup fresh blackberries, plus more for garnish
  • 2 tablespoons sugar
  • 1/2 teaspoon fresh lemon juice
  • 1/2 cup heavy cream
  • 1/4 cup plain Greek yogurt

Directions

  1. In a medium bowl, mash the blackberries with the sugar and lemon juice. Set aside.
  2. In a separate bowl, whisk together the cream and yogurt until light and fluffy.
  3. Spoon a layer of the blackberry mixture into the popsicle molds, about 1/4 of the way full. Then spoon a layer of the cream mixture over the blackberries, filling the molds about 3/4 of the way full.
  4. Gently tap the molds on the counter to release any air bubbles. Insert popsicle sticks and freeze for at least 4 hours or overnight.
  5. To serve, run the molds under warm water for a few seconds to release the popsicles. Garnish with fresh blackberries, if desired.
