Ingredients

  • 6 cups sliced onions
  • 3 tablespoons butter
  • 3 tablespoons olive oil
  • 2 tablespoons chopped garlic
  • 2 tablespoons sugar
  • 1/2 teaspoon ground thyme
  • 1/4 teaspoon ground nutmeg
  • 4 cups beef broth
  • 1/2 cup port wine
  • 2 tablespoons brandy
  • Salt and pepper to taste
  • Croutons and grated cheese, for garnish

Directions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the onions and sauté for 10 minutes, until they are golden brown.
  3. Add the garlic, sugar, thyme, and nutmeg and cook for 2 more minutes.
  4. Add the beef broth and port wine and bring to a boil.
  5. Reduce the heat and simmer for 30 minutes.
  6. Add the brandy, salt, and pepper and simmer for an additional 10 minutes.
  7. Serve with croutons and grated cheese, if desired.
