- 1/2 cup dried cranberries
- 1/2 cup dried apricots, chopped

- 1/2 cup candied pineapple

- 2 large eggs
- 1 teaspoon vanilla extract

- 1/4 teaspoon ground nutmeg
- For the glaze:
- 1/2 cup confectioners' sugar
- 2 tablespoons whole milk
- 1/4 teaspoon vanilla extract
Directions
- Preheat the oven to 350°F (175°C). Grease a 9-inch (23-cm) round cake pan.
- In a large bowl, combine the cranberries, apricots, raisins, walnuts, and pineapple. Add the flour, baking powder, and salt and stir to combine.
- In a medium bowl, cream together the butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla, cinnamon, and nutmeg.
- Add the wet ingredients to the dry ingredients and mix until well combined. Pour the batter into the prepared pan and bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- To make the glaze, whisk together the confectioners' sugar, milk, and vanilla until smooth.
- Drizzle the glaze over the cooled cake and let it set before serving.
