Ingredients

  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1 1/2 cups blueberries
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 cup milk

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 8 muffin cups.
  2. In a small bowl, mix together the melted butter and brown sugar. Divide this mixture among the 8 muffin cups.
  3. Sprinkle the blueberries over the mixture in each muffin cup.
  4. In a medium bowl, stir together the flour, baking powder, salt, and white sugar. Set aside.
  5. In a separate bowl, beat together the egg and milk. Add this mixture to the flour mixture and stir until just blended.
  6. Spoon the batter over the blueberry mixture in each muffin cup. The cups will be quite full.
  7. Bake for 20 minutes in the preheated oven, or until a toothpick inserted into the center of a cake comes out clean.
  8. Allow the cakes to cool for 5 minutes before inverting onto a plate.
