Roasted Roma Vinaigrette

Ingredients

  • 2 Roma tomatoes, halved
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1/2 cup of fresh basil, finely chopped
  • 1/4 cup of fresh parsley, finely chopped
  • 2 tablespoons of white wine vinegar
  • 1 tablespoon of honey
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375 degrees F.
  2. Place Roma tomatoes on a greased baking sheet and roast for 10 minutes.
  3. In a medium bowl, mix together garlic, olive oil, basil, parsley, vinegar, honey, salt and pepper.
  4. When tomatoes are finished roasting, let cool and then chop into small pieces.
  5. Add chopped tomatoes to the vinaigrette mixture and mix until combined.
  6. Serve over salad greens or as a side dish.
