Grandma's Gnocchi

Ingredients

  • 2 pounds russet potatoes
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup parsley, finely chopped

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Place the potatoes on a baking sheet and bake for 45 minutes, or until tender.
  3. Remove the potatoes from the oven and let cool. Peel the potatoes and mash them with a fork or potato ricer.
  4. In a large bowl, mix the mashed potatoes with the flour, salt, and pepper until a dough forms.
  5. On a lightly floured surface, roll the dough into a log about 1 inch thick.
  6. Cut the dough into 1-inch pieces and shape into gnocchi.
  7. Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water and cook for 3-5 minutes, or until they float to the surface.
  8. In a large skillet, melt the butter over medium heat. Add the cream and Parmesan cheese and cook until the sauce is thick and creamy.
  9. Add the cooked gnocchi to the sauce and toss to coat.
  10. Garnish with parsley and serve.
