Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped dates
  • 1/4 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, stir together the melted butter and sugars until blended.
  3. Beat in the egg and vanilla extract until light and creamy.
  4. In a separate bowl, mix together the flour, baking soda and salt.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just blended.
  6. Stir in the dates and pecans.
  7. Drop by tablespoons onto an ungreased cookie sheet.
  8. Bake for 10 to 12 minutes in the preheated oven, or until light brown.
  9. Let cool on the baking sheet before transferring to a wire rack to cool completely.
