Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons fresh ginger, grated
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 2 cups fresh tomatoes, diced
  • 1/2 cup white wine vinegar
  • 1/4 cup light brown sugar
  • 2 teaspoons sea salt
  • 2 cups fresh peaches, diced
  • 1/4 cup golden raisins
  • 1/4 cup currants

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the ginger, cumin, coriander and cayenne pepper and cook for 1 minute.
  3. Add the tomatoes, vinegar, brown sugar and salt. Bring to a boil, then reduce the heat and simmer for 10 minutes.
  4. Add the peaches, raisins and currants and simmer for 15 minutes, stirring occasionally.
  5. Remove from the heat and let cool before serving.
