Ingredients

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 4 nectarines, sliced
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch round cake pan.
  2. Melt butter in the pan over low heat. Remove from heat and stir in brown sugar until dissolved. Arrange nectarine slices in the pan.
  3. In a medium bowl, combine flour, baking powder, baking soda, and salt. In a large bowl, beat eggs and white sugar until light and fluffy. Beat in vanilla. Add flour mixture and buttermilk alternately to egg mixture, beating until just blended.
  4. Pour batter over nectarines. Bake in preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  5. Let cool in pan for 10 minutes, then turn out onto a plate. Serve warm or cold.
