Ingredients
- 1/2 cup butter
- 1/2 cup brown sugar
- 4 nectarines, sliced
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 3/4 cup white sugar
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
Directions
- Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch round cake pan.
- Melt butter in the pan over low heat. Remove from heat and stir in brown sugar until dissolved. Arrange nectarine slices in the pan.
- In a medium bowl, combine flour, baking powder, baking soda, and salt. In a large bowl, beat eggs and white sugar until light and fluffy. Beat in vanilla. Add flour mixture and buttermilk alternately to egg mixture, beating until just blended.
- Pour batter over nectarines. Bake in preheated oven for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let cool in pan for 10 minutes, then turn out onto a plate. Serve warm or cold.
