Ingredients

  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup long grain white rice
  • 1 1/4 cups vegetable or chicken broth
  • 1 cup frozen corn
  • 1/2 cup frozen peas
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened, about 5 minutes.
  2. Add the salt, pepper, rice, and broth. Bring the mixture to a boil, reduce the heat, cover, and simmer for 15 minutes.
  3. Add the corn and peas, cover, and simmer for an additional 5 minutes.
  4. Stir in the parsley and serve.
