Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup diced rhubarb
  • 1/2 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup melted butter
  • 1/2 teaspoon ground cinnamon

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  2. In a large bowl, stir together 1 cup flour, baking powder, salt, and white sugar. Make a well in the center and pour in oil, egg, and vanilla. Mix until just blended.
  3. Stir in rhubarb. Spoon batter into prepared muffin cups.
  4. In a small bowl, mix together brown sugar, 1/4 cup flour, melted butter, and cinnamon. Sprinkle over muffins.
  5. Bake in preheated oven for 25 to 30 minutes, or until a toothpick inserted into center of a muffin comes out clean.
