Ingredients

  • 1 cup of cooked white beans

  • 1/4 cup of diced red onion
  • 1/4 cup of diced green pepper
  • 1/4 cup of crumbled feta cheese
  • 1/2 cup of toasted pine nuts
  • 1/4 cup of diced tomato
  • 1/4 cup of pitted black olives
  • 1/4 cup of lemon juice

Directions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a medium bowl, combine the cooked white beans, olive oil, garlic powder, paprika, salt, and pepper. Mix until combined.
  3. Spread the bean mixture onto a baking sheet lined with parchment paper.
  4. Bake in the preheated oven for 15 minutes, or until the beans are lightly browned.
  5. In a separate bowl, combine the parsley, mint, red onion, green pepper, feta cheese, pine nuts, tomato, olives, and lemon juice.
  6. Remove the beans from the oven and transfer to a serving bowl.
  7. Top the beans with the parsley mixture and serve.
