Ingredients

  • 1/2 cup vegetable oil

Directions

  1. In a large Dutch oven, heat the oil over medium heat. Gradually whisk in the flour to make a roux, stirring constantly until it turns a caramel color.
  2. Add the onion, bell pepper, and garlic to the roux and cook until softened.
  3. Stir in the sliced sausage and cook until browned.
  4. Add the diced chicken thighs and cook until browned on all sides.
