Ingredients
- 2 pounds potatoes, peeled and cut into cubes
- 3 slices bacon, cooked and diced
- 1/2 cup mayonnaise
- 2 tablespoons white vinegar
- 1/4 cup chopped fresh parsley
- 1/2 cup diced cucumber
- Salt and pepper to taste
Directions
- Bring a large pot of salted water to a boil. Add the potatoes and cook until tender, about 10-15 minutes.
- Drain the potatoes and let cool for 10 minutes.
- In a large bowl, combine the potatoes, bacon, mayonnaise, vinegar, parsley, and cucumber. Mix well.
