Ingredients

  • 1 cup cooked quinoa
  • 1/2 cup cooked black beans
  • 1/2 cup shredded carrots
  • 1/4 cup finely diced onion
  • 1/4 cup finely chopped walnuts
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup bread crumbs
  • 2 tablespoons olive oil, plus more for cooking

Directions

  1. In a large bowl, combine the quinoa, black beans, carrots, onion, walnuts, garlic, oregano, smoked paprika, cumin, salt, pepper, and bread crumbs. Mix until all of the ingredients are evenly distributed.
  2. Form the mixture into 8 to 10 patties, about 1/2-inch thick.
  3. Heat the olive oil in a large skillet over medium-high heat. Add the patties and cook until golden brown on both sides, about 3 minutes per side.
  4. Serve the patties with your favorite side dish.
