Directions
- In a large bowl, combine the quinoa, black beans, carrots, onion, walnuts, garlic, oregano, smoked paprika, cumin, salt, pepper, and bread crumbs. Mix until all of the ingredients are evenly distributed.
- Form the mixture into 8 to 10 patties, about 1/2-inch thick.
- Heat the olive oil in a large skillet over medium-high heat. Add the patties and cook until golden brown on both sides, about 3 minutes per side.
- Serve the patties with your favorite side dish.
