Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 (14-ounce) can diced tomatoes
  • 1 (4-ounce) can chipotle chiles in adobo sauce, chopped
  • 1 (15-ounce) can kidney beans, drained and rinsed
  • 1 cup beef broth
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook, stirring occasionally, until the beef is browned and cooked through, about 8 minutes.
  2. Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
  3. Add the chili powder, cumin, and oregano and cook, stirring, for 1 minute.
  4. Add the diced tomatoes, chipotle chiles, kidney beans, and beef broth and stir to combine. Bring to a boil, then reduce the heat to low and simmer, uncovered, for 15 minutes.
  5. Season with salt and pepper to taste and serve.
