1 (4-ounce) can chipotle chiles in adobo sauce, chopped
1 (15-ounce) can kidney beans, drained and rinsed
1 cup beef broth
Salt and pepper to taste
Directions
Heat the olive oil in a large pot over medium-high heat. Add the ground beef and cook, stirring occasionally, until the beef is browned and cooked through, about 8 minutes.
Add the onion and garlic and cook, stirring occasionally, until the onion is softened, about 5 minutes.
Add the chili powder, cumin, and oregano and cook, stirring, for 1 minute.
Add the diced tomatoes, chipotle chiles, kidney beans, and beef broth and stir to combine. Bring to a boil, then reduce the heat to low and simmer, uncovered, for 15 minutes.
Season with salt and pepper to taste and serve.
