Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup diced bell pepper
  • 1 cup diced zucchini
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup pizza sauce
  • 6 eggs
  • 1/4 cup milk
  • 1/2 cup shredded mozzarella cheese

Directions

  1. Preheat oven to 350 degrees F.
  2. Heat olive oil in a large oven-safe skillet over medium heat. Add onion, garlic, bell pepper, zucchini, Italian seasoning, salt, and black pepper. Cook, stirring occasionally, until vegetables are softened, about 5 minutes.
  3. Stir in pizza sauce and cook for an additional 2 minutes. Remove from heat.
  4. In a large bowl, whisk together eggs and milk. Pour egg mixture over the vegetables in the skillet and sprinkle with cheese.
  5. Bake in preheated oven for 15-20 minutes, or until the top is lightly golden and the center is set.
  6. Remove from oven and let cool for a few minutes before slicing and serving.
