Ingredients
4 large potatoes
4 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
Salt and pepper to taste
Directions
Preheat oven to 400°F.
Scrub the potatoes and pat dry.
Score the potatoes by making thin slices (about 1/8 inch thick) about halfway through the potato, being careful not to cut all the way through.
In a small bowl, mix together the olive oil, garlic powder, onion powder, and smoked paprika.
Brush each potato with the olive oil mixture and season with salt and pepper.
Place on a baking sheet and bake for 30 minutes, flipping halfway through.
Remove from the oven and let cool before serving.

Hasselback potatoes were first created in the 1700s at a Swedish restaurant called Hasselbacken.
The word "Hasselback" means "hazel tree" in Swedish.
The thin slices in the potatoes allow them to crisp up nicely in the oven, while the center remains nice and fluffy.
