Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon cayenne pepper
  • 1 cup basmati or long-grain white rice
  • 1 3/4 cups chicken broth
  • 1/2 cup frozen peas
  • Salt and freshly ground black pepper, to taste

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion, garlic, and jalapeno pepper and cook for 5 minutes, stirring occasionally. Add the cumin, paprika, turmeric, coriander, ginger, and cayenne pepper and cook for 1 minute, stirring constantly.
  2. Add the rice and cook for 2 minutes, stirring occasionally.
  3. Add the chicken broth and bring to a simmer. Reduce the heat to low, cover, and cook for 15 minutes.
  4. Add the frozen peas and cook for 5 minutes, stirring occasionally. Season with salt and black pepper to taste.
  5. Remove from the heat and let sit, covered, for 5 minutes. Fluff with a fork and serve.
