Ingredients
1 cup all-purpose flour
1/2 cup old-fashioned rolled oats
1/4 teaspoon baking powder
1/2 teaspoon fine sea salt
3 tablespoons cold unsalted butter, cut into small cubes
1/4 cup cold water
Directions
Preheat oven to 350°F.
In a medium bowl, whisk together the flour, oats, baking powder, and salt.
Add the butter cubes and use a pastry blender or your fingers to cut in the butter until the mixture resembles a coarse meal.
Add the cold water and mix with a fork until the dough comes together.
On a lightly floured surface, roll out the dough to 1/8-inch thickness.
Using a pizza cutter or sharp knife, cut the dough into desired shapes.
Place the crackers on a parchment-lined baking sheet and bake for 10-12 minutes, or until golden brown.
Let cool completely before serving.
Interesting Facts
You can add some sweetness to your crackers by adding 1-2 tablespoons of honey to the dough.
Oatmeal crackers are a great way to use up leftover oatmeal.
For extra crunch, try adding 1/4 cup of chopped nuts or seeds to the dough.
