Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup sour cream
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 1/2 cup semi-sweet chocolate chips, melted
  • 1/4 cup heavy cream

Directions

  1. Preheat oven to 350F. Grease a 12-cup muffin tin with non-stick cooking spray and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla extract and mix until combined.
  4. Add the flour mixture to the butter mixture in three batches, alternating with the sour cream. Stir in the chocolate chips.
  5. Divide the batter evenly among the muffin cups. Bake for 18-20 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
  6. Remove from the oven and let cool completely before filling.
  7. To make the filling, combine the heavy cream and powdered sugar in a medium bowl, and beat until stiff peaks form. Gently fold in the melted chocolate chips.
  8. To assemble, use a paring knife to cut a small hole in the center of each cupcake. Fill with the chocolate cream filling. Pipe or spread the fudge icing over the top of each cupcake. Enjoy!
