Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh lemon juice

  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup crumbled feta cheese

Directions

  1. In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
  2. Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Close the bag and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 24 hours.
  3. Preheat the oven to 375°F (190°C).
  4. Heat a large ovenproof skillet over medium-high heat. Remove the chicken from the marinade, allowing any excess marinade to drip off. Place the chicken in the skillet and cook until browned, about 3-4 minutes per side.
  5. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  6. While the chicken is baking, prepare the lemon sauce. In a saucepan, combine chicken broth and heavy cream. Bring to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes, or until the sauce has slightly thickened.
  7. Remove the chicken from the oven and pour the lemon sauce over it. Sprinkle the crumbled feta cheese and sliced Kalamata olives on top.
