Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup crumbled feta cheese
- 1/4 cup pitted Kalamata olives, sliced
- Fresh parsley for garnish
Directions
- In a bowl, combine olive oil, minced garlic, lemon juice, dried oregano, salt, and pepper.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over them. Close the bag and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 24 hours.
- Preheat the oven to 375°F (190°C).
- Heat a large ovenproof skillet over medium-high heat. Remove the chicken from the marinade, allowing any excess marinade to drip off. Place the chicken in the skillet and cook until browned, about 3-4 minutes per side.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
- While the chicken is baking, prepare the lemon sauce. In a saucepan, combine chicken broth and heavy cream. Bring to a simmer over medium heat, stirring occasionally. Cook for about 10 minutes, or until the sauce has slightly thickened.
- Remove the chicken from the oven and pour the lemon sauce over it. Sprinkle the crumbled feta cheese and sliced Kalamata olives on top.
