Ingredients

  • 1 pound pork belly
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey

  • 1 teaspoon Chinese five-spice powder
  • Salt and pepper, to taste
  • 2 cups cooked rice
  • 1/2 cup frozen peas and carrots, thawed

  • 2 eggs, beaten
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, sliced

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Score the skin of the pork belly with a sharp knife, being careful not to cut into the meat. This helps the skin to crisp up during cooking.
  3. In a small bowl, mix together the soy sauce, rice vinegar, honey, grated ginger, minced garlic, Chinese five-spice powder, salt, and pepper.
  4. Place the pork belly in a roasting pan and pour the marinade over it, making sure to coat it evenly. Let it marinate for at least 30 minutes, or overnight in the refrigerator for best results.
  5. Cover the roasting pan with foil and roast the pork belly for 40 minutes. Then, remove the foil and continue roasting for another 20 minutes, or until the skin is crispy and the meat is tender.
