Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup sweetened shredded coconut

Directions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed until well combined.
  4. Reduce the speed to low and gradually add the boiling water. Mix until the batter is smooth.
  5. Divide the batter equally between the prepared cake pans.
  6. Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. While the cakes are cooling, prepare the coconut frosting. (Recipe below)
  9. Once the cakes are completely cooled, place one cake layer on a serving plate. Spread a layer of coconut frosting evenly over the top.
  10. Place the second cake layer on top and frost the entire cake with the remaining coconut frosting.
  11. Sprinkle the shredded coconut over the frosted cake, pressing gently to adhere it to the sides.
