  • 1/3 cup chopped dried figs
  • 1/4 cup chopped walnuts
  • 1/4 cup chopped almonds
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice

Directions

  1. Rinse the quinoa under cold water to remove any bitterness.

  5. Fluff the quinoa with a fork and let it cool.
  6. In a large bowl, combine the cooked quinoa, dried apricots, dried cranberries, dried figs, walnuts, almonds, pistachios, parsley, and mint.
  7. In a separate small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper.
  8. Pour the dressing over the quinoa mixture and toss gently to coat.
  9. Refrigerate for at least 30 minutes to allow the flavors to meld.
  10. Serve chilled and enjoy!
