Ingredients

  • 1 cup almonds
  • 1 cup walnuts
  • 1 cup rolled oats
  • 1 cup dried dates
  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1/2 cup almond butter
  • 1/4 cup honey
  • 1/4 cup coconut oil
  • 1/4 cup chia seeds
  • 1/4 cup flaxseeds
  • 1/4 cup shredded coconut

Directions

  1. In a food processor, pulse the almonds, walnuts, and oats until coarsely ground.
  2. Add the dried dates, cranberries, and raisins to the processor and pulse until well combined.
  3. In a small saucepan, heat the almond butter, honey, and coconut oil over low heat until melted and well mixed.
  4. Pour the mixture from the saucepan into the food processor and pulse until fully combined.
  5. Transfer the mixture to a large mixing bowl.
  6. Add the chia seeds, flaxseeds, and shredded coconut to the bowl and mix well with a spatula.
  7. Line a baking dish with parchment paper and transfer the mixture into it.
  8. Press the mixture firmly and evenly into the dish.
  9. Place the dish in the refrigerator for at least 2 hours to set.
  10. Once set, remove the power bars from the dish and cut into desired shapes and sizes.
  11. Store the power bars in an airtight container in the refrigerator for up to one week.
