Motion by the Ocean is a delightful seafood pasta dish that brings the flavors of the sea to your plate. This recipe combines the richness of shrimp, the tender sweetness of scallops, the brininess of clams, and the freshness of tomatoes and parsley. The pasta is perfectly al dente and coated in a light and flavorful sauce. It's a truly satisfying dish that will transport you to the seaside with every bite.

Ingredients

  • 8 oz linguine
  • 1 tbsp olive oil
  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb scallops
  • 2 cloves garlic, minced
  • 1/2 cup white wine
  • 1 cup cherry tomatoes, halved
  • 1/2 cup clam juice
  • 1/2 cup vegetable broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Directions

  1. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the shrimp and scallops and cook until they turn pink and are cooked through, about 3-4 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
  4. Pour in the white wine and cook for 2 minutes, allowing it to reduce slightly.
  5. Add the cherry tomatoes, clam juice, and vegetable broth to the skillet. Bring to a simmer and cook for 5 minutes, until the tomatoes start to soften.
  6. Return the shrimp and scallops to the skillet. Add the cooked linguine and toss everything together until well coated.
  7. Stir in the chopped parsley and season with salt and pepper to taste.
  8. Serve the Motion by the Ocean pasta hot, garnished with additional parsley if desired.
