Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1/4 cup butter
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup diced bacon
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. Place potatoes in a pot and fill with enough water to cover the potatoes. Bring to a boil and cook until potatoes are tender, about 10 minutes.
  3. Drain potatoes and mash with a potato masher. Add butter, milk, cheese, bacon, and green onions. Mix until combined and season with salt and pepper.
  4. Transfer mashed potatoes to a greased 9x13 inch baking dish. Bake in preheated oven for 20 minutes, or until cheese is melted and potatoes are heated through.
  5. Serve hot.
