My Mom's Venezuelan Chupe

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 1 (15-ounce) can corn, drained
  • 1 (15-ounce) can white beans, drained and rinsed
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • Salt and pepper, to taste
  • 1/2 cup grated cheese (cheddar, Monterey Jack, etc)

Directions

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 3-4 minutes, until the onion is softened.
  2. Add the chicken, corn, beans, broth, cumin, salt and pepper and bring to a simmer. Simmer for 10 minutes.
  3. Turn off the heat and stir in the grated cheese. Serve hot.
