1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 cups cooked chicken, shredded
1 (15-ounce) can corn, drained
1 (15-ounce) can white beans, drained and rinsed
2 cups chicken broth
1 teaspoon cumin
Salt and pepper, to taste
1/2 cup grated cheese (cheddar, Monterey Jack, etc)
Directions
Heat the oil in a large pot over medium heat. Add the onion and garlic and cook for 3-4 minutes, until the onion is softened.
Add the chicken, corn, beans, broth, cumin, salt and pepper and bring to a simmer. Simmer for 10 minutes.
Turn off the heat and stir in the grated cheese. Serve hot.
