Ingredients
- 3 pounds beef chuck roast
- 1 tablespoon olive oil

- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon black pepper
- Salt to taste
- 4-6 French rolls
- Provolone or Swiss cheese slices (optional)
Directions
- Set the Instant Pot to sauté mode and heat the olive oil.
- Sear the beef chuck roast on all sides until browned, then remove from the Instant Pot.
- Add the sliced onions and garlic to the Instant Pot and sauté until softened.
- Pour in the beef broth, soy sauce, Worcestershire sauce, thyme, rosemary, black pepper, and salt.
- Return the beef to the Instant Pot and seal the lid. Cook on high pressure for 45 minutes, then naturally release for 15 minutes before venting.
- Remove the beef from the Instant Pot and shred with two forks.
- Strain the cooking liquid to remove the onions and garlic, then spoon some of the au jus over the shredded beef.
- Slice the French rolls in half and toast under the broiler. Add the shredded beef and optional cheese slices to the rolls.
