Ingredients

  • 4 boneless chicken breasts
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of chili powder
  • 1 teaspoon of ground cumin
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground cloves
  • 2 tablespoons of olive oil
  • 1/2 cup of chicken broth
  • 1 can of diced tomatoes
  • 1/4 cup of raisins
  • 1/4 cup of slivered almonds
  • 1/4 cup of unsweetened cocoa powder
  • 1/4 cup of honey
  • 1/4 cup of creamy peanut butter
  • Salt and pepper to taste

Directions

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook for about 5 minutes, or until the onion is softened.
  2. Add the chili powder, cumin, oregano, cinnamon, and cloves and cook for another minute, stirring constantly.
  3. Add the chicken broth and bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the sauce has thickened.
  4. Transfer the sauce to a slow cooker and add the chicken, tomatoes, raisins, almonds, cocoa powder, honey, and peanut butter. Stir to combine.
  5. Cover and cook on low for 6-8 hours, or until the chicken is cooked through.
  6. Season to taste with salt and pepper and serve.
