Ingredients
4 boneless chicken breasts
1 onion, diced
2 cloves of garlic, minced
2 tablespoons of chili powder
1 teaspoon of ground cumin
1 teaspoon of dried oregano
1/2 teaspoon of ground cinnamon
1/4 teaspoon of ground cloves
2 tablespoons of olive oil
1/2 cup of chicken broth
1 can of diced tomatoes
1/4 cup of raisins
1/4 cup of slivered almonds
1/4 cup of unsweetened cocoa powder
1/4 cup of honey
1/4 cup of creamy peanut butter
Salt and pepper to taste
Directions
In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook for about 5 minutes, or until the onion is softened.
Add the chili powder, cumin, oregano, cinnamon, and cloves and cook for another minute, stirring constantly.
Add the chicken broth and bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the sauce has thickened.
Transfer the sauce to a slow cooker and add the chicken, tomatoes, raisins, almonds, cocoa powder, honey, and peanut butter. Stir to combine.
Cover and cook on low for 6-8 hours, or until the chicken is cooked through.
Season to taste with salt and pepper and serve.
