Ingredients

  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil, melted
  • 1/2 cup applesauce
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Directions

  1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin pan with coconut oil.
  2. In a large bowl, mix together the flours, baking powder, baking soda, and salt. Set aside.
  3. In a separate bowl, whisk together the melted coconut oil, applesauce, maple syrup, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the blueberries.
  5. Divide the batter evenly between the muffin cups. Bake for 25 minutes or until a toothpick inserted in the center of a muffin comes out clean.
