Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 jalapeno pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon oregano
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/2 cup corn kernels, frozen or fresh
  • 1/2 cup grated cheese, such as Monterey Jack or Cheddar
  • 1/4 cup chopped fresh cilantro

Directions

  1. Preheat the oven to 350 degrees F.
  2. In a large skillet over medium-high heat, cook the beef, onion, bell pepper, and jalapeno pepper until the beef is browned, about 8 minutes. Add the garlic, chili powder, cumin, and oregano and cook for 1 minute more.
  3. Add the tomatoes, beans, and corn and cook for 5 minutes more.
  4. Pour the mixture into a 9x13-inch baking dish. Sprinkle the cheese over the top and bake for 15 minutes.
  5. Remove from the oven and let cool for 5 minutes. Sprinkle with the cilantro and serve.
