1/2 cup grated cheese, such as Monterey Jack or Cheddar
1/4 cup chopped fresh cilantro
Directions
Preheat the oven to 350 degrees F.
In a large skillet over medium-high heat, cook the beef, onion, bell pepper, and jalapeno pepper until the beef is browned, about 8 minutes. Add the garlic, chili powder, cumin, and oregano and cook for 1 minute more.
Add the tomatoes, beans, and corn and cook for 5 minutes more.
Pour the mixture into a 9x13-inch baking dish. Sprinkle the cheese over the top and bake for 15 minutes.
Remove from the oven and let cool for 5 minutes. Sprinkle with the cilantro and serve.
