Ingredients

  • 2 cups of cornmeal
  • 1 cup of all-purpose flour
  • 4 tablespoons of baking powder
  • 1 teaspoon of salt
  • 2 tablespoons of sugar
  • 2 tablespoons of vegetable oil
  • 2 eggs
  • 1 cup of milk
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of ground paprika

Directions

  1. Preheat oven to 400°F (200°C). Grease a 9-inch (23 cm) round baking pan with butter.
  2. In a large bowl, mix together cornmeal, flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together oil, eggs, and milk. Then stir in the oregano, thyme, and paprika.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared pan and spread evenly.
  6. Bake in preheated oven for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in pan for 10 minutes before serving.
