Ingredients

  • 3 lbs. boneless pork shoulder, trimmed and cut into 4 equal pieces
  • 1/4 cup Bourbon
  • 1/4 cup mango purée
  • 1/4 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cumin
  • Salt, to taste

Directions

  1. Preheat your oven to 325°F.
  2. In a small bowl, whisk together bourbon, mango puree, ketchup, Worcestershire sauce, brown sugar, garlic powder, onion powder, smoked paprika, dry mustard, black pepper, and cumin until smooth.
  3. Place the pork pieces in a large baking dish, and pour the bourbon-mango mixture over the pork. Rub the mixture into the pork until it’s evenly coated.
  4. Cover the baking dish with foil and bake for 2 hours, or until the pork is tender and easily shreds with a fork.
  5. Remove the pork from the oven and shred with two forks. Return the shredded pork to the baking dish and stir to combine with the sauce.
  6. Taste and adjust the seasoning with salt, if needed.
  7. Serve the pulled pork with your favorite accompaniments.
