Ingredients

  • 1 pound salmon fillets, skin removed and cut into chunks

  • 2 celery stalks, diced
  • 4 cups vegetable broth

Directions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the diced onion and minced garlic to the pot and cook until the onion is translucent and the garlic is fragrant.
  3. Add the diced potatoes, carrots, and celery to the pot and sauté for a few minutes.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer until the vegetables are tender, about 15 minutes.
  5. While the vegetables are cooking, season the salmon chunks with salt, pepper, and dried thyme.
  6. In a separate pan, heat a small amount of olive oil over medium-high heat.
