Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 1/2 cups powdered sugar
  • 1/2 cup creamy peanut butter
  • 8 ounces cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream
  • 1/2 cup chopped roasted peanuts (optional)

Directions

  1. Preheat the oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture evenly into the bottom of the prepared baking dish to form the crust.
  3. In a large mixing bowl, beat together the powdered sugar, peanut butter, cream cheese, and vanilla extract until smooth and creamy. Spread the mixture evenly over the crust.
  4. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and add the chocolate chips. Stir until the chocolate is melted and the mixture is smooth.
  5. Pour the chocolate ganache over the cream cheese layer in the baking dish, spreading it evenly with a spatula. If desired, sprinkle the chopped peanuts over the top for added crunch.
  6. Refrigerate the bars for at least 2 hours to set.
  7. Once set, remove the bars from the dish using the parchment paper. Cut into squares and serve chilled. Enjoy!
