Ingredients

Directions

  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt for the carrot cake.
  3. In a separate bowl, whisk together the eggs, vegetable oil, and crushed pineapple.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. Fold in the grated carrots and chopped walnuts.
  6. To make the bourbon cheesecake swirl, beat the cream cheese, sugar, bourbon, egg, and vanilla extract in a separate bowl until smooth and creamy.
