Ingredients

  • 1 cup of rice flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of ground cinnamon
  • 1/2 teaspoon of salt
  • 2 tablespoons of sugar
  • 1 cup of milk
  • 2 tablespoons of melted butter or coconut oil
  • 1 egg

Directions

  1. In a medium bowl, whisk together the rice flour, baking powder, cinnamon, salt, and sugar.
  2. Add the milk, melted butter or coconut oil, and egg and stir until combined.
  3. Heat a nonstick skillet over medium-low heat. Grease the pan with butter or coconut oil.
  4. Scoop about 1/4 cup of the batter onto the skillet and spread it out into a circle.
  5. Cook for about 2-3 minutes until the edges are golden brown and the center is cooked through.
  6. Flip the pancake and cook for an additional 2 minutes until golden brown.
  7. Repeat with the remaining batter.
  8. Serve topped with your favorite toppings.
