Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced apples
  • 2 tablespoons all-purpose flour
  • 1/2 cup firmly packed light brown sugar
  • 1/2 cup heavy cream
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together 2 cups flour, baking powder, baking soda, cinnamon, nutmeg, cloves and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. Pour the batter into a greased 9×13 inch baking pan.
  7. In a medium bowl, toss the diced apples with 2 tablespoons flour, brown sugar, cream, walnuts, and raisins.
  8. Spread the apples over the cake batter.
  9. Bake for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  10. Allow to cool before serving.
