Ingredients
1 pound mussels
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon fresh parsley, chopped
1/2 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/2 cup dry white wine
2 tablespoons butter, melted
1/4 cup freshly grated Parmesan cheese
Salt and pepper, to taste
Directions
In a large pot over medium-high heat, heat the olive oil. Add the garlic and sauté for 1 minute.
Add the mussels, parsley, oregano, and red pepper flakes to the pot. Sauté for 2 minutes.
Pour in the white wine and bring to a boil. Reduce the heat to low and cover the pot. Simmer for 5 minutes or until the mussels have opened.
Remove the pot from the heat and stir in the butter and Parmesan cheese. Season with salt and pepper to taste. Serve hot.
