Ingredients

  • 1 pound mussels
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh parsley, chopped
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup dry white wine
  • 2 tablespoons butter, melted
  • 1/4 cup freshly grated Parmesan cheese
  • Salt and pepper, to taste

Directions

  1. In a large pot over medium-high heat, heat the olive oil. Add the garlic and sauté for 1 minute.
  2. Add the mussels, parsley, oregano, and red pepper flakes to the pot. Sauté for 2 minutes.
  3. Pour in the white wine and bring to a boil. Reduce the heat to low and cover the pot. Simmer for 5 minutes or until the mussels have opened.
  4. Remove the pot from the heat and stir in the butter and Parmesan cheese. Season with salt and pepper to taste. Serve hot.
