Ingredients

  • 1 fresh pineapple, cubed
  • 1 red onion, cubed
  • 2 bell peppers, cubed
  • 1 lb. boneless, skinless chicken breasts, cubed
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Directions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine the pineapple, red onion, bell peppers, and chicken cubes.
  3. In a small bowl, whisk together the olive oil, honey, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper.
  4. Pour the marinade over the chicken and vegetables and mix until everything is evenly coated.
  5. Thread the chicken and vegetables onto skewers, alternating between the different ingredients.
