Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked quinoa
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 2 cups vegetable broth
  • 2 cups baby spinach
  • 1/2 cup grated Parmesan cheese

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened and translucent, about 5 minutes.
  2. Add the quinoa, salt, pepper, cumin, turmeric, coriander, paprika, and garlic powder. Stir to combine and cook for 2 minutes.
  3. Add the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until all liquid is absorbed.
  4. Add the spinach and Parmesan cheese and stir to combine. Cover and cook for an additional 5 minutes or until the spinach is wilted.
