Ingredients
2 tablespoons vegetable oil
1/2 pound chicken or pork, cut into small cubes
1 large onion, diced
2 cloves garlic, minced
1 green bell pepper, diced
1 red bell pepper, diced
1 cup snow peas or chopped broccoli
1/4 cup soy sauce
1/4 cup water
Salt and pepper to taste
Directions
Heat the oil in a large skillet or wok over medium-high heat.
Add the chicken or pork and cook until it is no longer pink.
Add the onion, garlic, bell peppers, and snow peas or broccoli to the skillet and cook for 3-4 minutes, stirring often.
Stir in the soy sauce, water, salt and pepper.
Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes, stirring occasionally.
Serve over rice or noodles.
