Ingredients

  • 2/3 cup all-purpose flour
  • 1/3 cup cocoa powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup buttermilk
  • 3 ounces dark chocolate, chopped
  • 1 tablespoon Texas-style chili powder

Directions

  1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract until combined.
  5. Add the dry ingredients to the wet ingredients in three batches, alternating with the buttermilk and stirring gently after each addition.
  6. Fold in the chopped dark chocolate and chili powder.
  7. Divide the batter evenly among the 12 paper liners.
