Heat olive oil in a large skillet over medium heat. Add onion and garlic, and cook until onion is softened and translucent, about 5 minutes. Add celery, mushrooms, carrots, thyme, rosemary, nutmeg, black pepper, cloves, and salt. Cook until vegetables are tender, about 8 minutes.
Add vegetable broth and cook for 1 minute more. Remove from heat and let cool.
Place the pastry crust into a 9-inch pie dish. Pour the cooled vegetable mixture into the crust.
Bake in preheated oven until crust is golden brown, about 30 minutes.
