Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 celery stalks, diced
- 1 cup diced mushrooms
- 1 cup diced carrots
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup vegetable broth
- 1 9-inch vegan pastry crust
Directions
- Preheat oven to 375 degrees F (190 degrees C).
- Heat olive oil in a large skillet over medium heat. Add onion and garlic, and cook until onion is softened and translucent, about 5 minutes. Add celery, mushrooms, carrots, thyme, rosemary, nutmeg, black pepper, cloves, and salt. Cook until vegetables are tender, about 8 minutes.
- Add vegetable broth and cook for 1 minute more. Remove from heat and let cool.
- Place the pastry crust into a 9-inch pie dish. Pour the cooled vegetable mixture into the crust.
- Bake in preheated oven until crust is golden brown, about 30 minutes.
- Let cool before slicing and serving.
