Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 celery stalks, diced
  • 1 cup diced mushrooms
  • 1 cup diced carrots
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup vegetable broth
  • 1 9-inch vegan pastry crust

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. Heat olive oil in a large skillet over medium heat. Add onion and garlic, and cook until onion is softened and translucent, about 5 minutes. Add celery, mushrooms, carrots, thyme, rosemary, nutmeg, black pepper, cloves, and salt. Cook until vegetables are tender, about 8 minutes.
  3. Add vegetable broth and cook for 1 minute more. Remove from heat and let cool.
  4. Place the pastry crust into a 9-inch pie dish. Pour the cooled vegetable mixture into the crust.
  5. Bake in preheated oven until crust is golden brown, about 30 minutes.
  6. Let cool before slicing and serving.
