Ingredients

  • 1/2 cup butter, melted
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 cup cold water
  • 1/2 cup white sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 3 eggs, beaten
  • 1/2 cup light corn syrup
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a medium bowl, mix together 1/2 cup melted butter, 1 1/4 cups flour, 1 teaspoon sugar, and 1/4 teaspoon salt. Gradually stir in 1/4 cup cold water to form a dough. Roll out dough and press into a 9 inch pie plate.
  3. In a separate bowl, mix together 1/2 cup sugar, 2 tablespoons flour, nutmeg, cinnamon and ginger. Beat in eggs, corn syrup, and 1 teaspoon vanilla. Pour filling into pie crust.
  4. Bake in preheated oven for 40 minutes, or until filling is set.
