Ingredients

  • 3 cups of apple cider
  • 1/2 cup of kosher salt
  • 1/2 cup of brown sugar
  • 1/4 cup of fresh thyme leaves
  • 1/4 cup of freshly cracked black pepper
  • 2 tablespoons of orange zest
  • 1 tablespoon of garlic powder
  • 1 tablespoon of ground ginger
  • 4 quarts of cold water

Directions

  1. In a large pot, combine the apple cider, kosher salt, brown sugar, thyme leaves, black pepper, orange zest, garlic powder, and ground ginger.
  2. Whisk to combine and bring the mixture to a boil.
  3. Once boiling, reduce heat to a low simmer and let the brine cook for five minutes.
  4. Remove the pot from heat and let the brine cool completely.
  5. Once cool, add the brine to a large container and add the cold water.
  6. Stir to combine and submerge the turkey in the brine.
  7. Cover and place in the refrigerator overnight or for at least 8 hours.
  8. Remove the turkey from the brine and rinse off with cold running water.
  9. Pat dry and proceed with your recipe.
